A very healthy and practical homemade dish, here’s Edamame Soup Noodles. This dish is made with Edashi Edamame and sago flour, topped with your choice of toppings and served with a flavorful broth.

Ingredients Mie

  1. Sago flour 250 grams
  2. Water 300 grams
  3. Edashi Edamame 200 grams
  4. Salt 1 tsp

Garlic Oil

  1. Chicken skin 100 grams
  2. Garlic 7 cloves
  3. Cooking oil as needed

    Seasoning Mix
  1. Liquid stock 250 ml
  2. Garlic oil 1 tbsp
  3. Sweet soy sauce 1 tsp
  4. Soy sauce 1 tbsp
  5. Chili powder 1 tsp
  6. Mushroom stock 1 tsp

Preparation Steps

  1. Heat 100 grams of chicken skin until it releases oil, then set aside.
  2. Sauté the chopped garlic with the chicken skin, adding a little cooking oil, until golden brown.
  3. Let it cool until the foam disappears and the garlic settles at the bottom of the oil. Set aside.
  4. Soak Edashi Edamame for 2 minutes, then peel off the skin.
  5. Blend the peeled edamame with 50 ml of water until smooth.
  6. Mix 100 grams of sago flour with 250 grams of water and the edamame puree, and stir well.
  7. Cook the mixture until it thickens, then set aside.
  8. Mix the dough using a standing mixer at medium speed.
  9. Flatten the dough into a sheet using a pasta machine, sprinkling a little sago flour to prevent sticking.
  10. Shape the noodles by passing the dough through the pasta maker.
  11. Boil the sago noodles in boiling water for a few seconds (5 seconds).
  12. Add a little oil to prevent the noodles from sticking and pour in the hot broth.
  13. Pour 1 tbsp of garlic oil, 1 tsp of sweet soy sauce, 1 tbsp of soy sauce, 1 tsp of chili powder, and 1 tsp of mushroom stock into a serving plate.
  14. Mix the noodles with the seasoning and broth. Serve.
