A very healthy and practical homemade dish, here’s Edamame Soup Noodles. This dish is made with Edashi Edamame and sago flour, topped with your choice of toppings and served with a flavorful broth.
Ingredients Mie
- Sago flour 250 grams
- Water 300 grams
- Edashi Edamame 200 grams
- Salt 1 tsp
Garlic Oil
- Chicken skin 100 grams
- Garlic 7 cloves
- Cooking oil as needed
Seasoning Mix
- Liquid stock 250 ml
- Garlic oil 1 tbsp
- Sweet soy sauce 1 tsp
- Soy sauce 1 tbsp
- Chili powder 1 tsp
- Mushroom stock 1 tsp
Preparation Steps
- Heat 100 grams of chicken skin until it releases oil, then set aside.
- Sauté the chopped garlic with the chicken skin, adding a little cooking oil, until golden brown.
- Let it cool until the foam disappears and the garlic settles at the bottom of the oil. Set aside.
- Soak Edashi Edamame for 2 minutes, then peel off the skin.
- Blend the peeled edamame with 50 ml of water until smooth.
- Mix 100 grams of sago flour with 250 grams of water and the edamame puree, and stir well.
- Cook the mixture until it thickens, then set aside.
- Mix the dough using a standing mixer at medium speed.
- Flatten the dough into a sheet using a pasta machine, sprinkling a little sago flour to prevent sticking.
- Shape the noodles by passing the dough through the pasta maker.
- Boil the sago noodles in boiling water for a few seconds (5 seconds).
- Add a little oil to prevent the noodles from sticking and pour in the hot broth.
- Pour 1 tbsp of garlic oil, 1 tsp of sweet soy sauce, 1 tbsp of soy sauce, 1 tsp of chili powder, and 1 tsp of mushroom stock into a serving plate.
- Mix the noodles with the seasoning and broth. Serve.
