Ingredients Crepe Batter:

  1. Sago Flour – 120 grams
  2. Edashi Edamame – 100 grams
  3. Liquid Milk – 400 mL
  4. Sugar – 20 grams
  5. Egg – 1
  6. Rice Flour – 80 grams
  7. Vanilla Extract – 1/4 tsp
  8. Salt – 1/4 tsp
  9. Water – 50 mL
  10. Melted Butter – 10 grams

Cream Layer

  1. Edamame Puree – 80 grams
  2. Liquid Milk – 50 mL
  3. Whipped Cream – 80 grams

Preparation Steps

  1. Soak Edashi Edamame in hot water for 2 minutes, then peel off the skin. Set aside.
  2. Make edamame puree by blending 50 g of Edashi Edamame with 50 mL of water. Set aside.
  3. Beat the egg in a separate bowl until frothy.
  4. Mix sago flour, rice flour, and sugar evenly.
  5. Add 75 g of edamame puree, liquid milk, egg, melted butter, salt, and vanilla extract into the mixture.
  6. Stir the batter until smooth with no lumps.
  7. Heat a non-stick pan and lightly grease with oil.
  8. Pour the batter into the pan, spread evenly, and cook on low heat until done.
  9. Remove the cooked crepe and set aside. Repeat until all the batter is used.
  10. Prepare the cream layer by whipping chilled whipped cream until stiff.
  11. Add edamame puree and liquid milk, then mix gently until well combined. Set aside.
  12. Layer the crepes with cream in a dish, stacking them until all the crepes are used.
  13. Mille Crepes Edamame is ready to serve.
