Edamame Chawanmushi

No need to travel all the way to Japan to enjoy Edamame Chawanmushi. This snack can be made at home using protein-rich Edashi Edamame and your favorite shiitake mushrooms. It has a delicious, very soft texture and is high in protein.

Ingredients

  1. Edashi Edamame – 100 grams
  2. Broth (chicken or vegetable) – 525 grams
  3. Eggs – 4
  4. Salt – to taste
  5. Shiitake mushrooms – 6 pieces

Preparation Steps

  1. Soak the Edashi Edamame in hot water for 2 minutes, then peel the skins.
  2. Blend the peeled edamame with the broth until smooth. Set aside.
  3. Beat the eggs and add a pinch of salt.
  4. Mix the beaten eggs with the blended edamame.
  5. Pour the mixture into chawanmushi cups and place the shiitake mushroom slices on top.
  6. Steam for 5-7 minutes.
  7. The Edamame Chawanmushi is ready to serve.
