Mini Rosti Edamame

A signature snack from Switzerland, Mini Rosti Edamame, made with a base of potatoes and combined with tapioca flour and Edashi Edamame.

Ingredients

  1. Edashi Edamame – 50 grams
  2. Tapioca flour – 25 grams
  3. Potatoes – 250 grams
  4. Butter – 40 ml
  5. Ground coriander – ½ tsp
  6. Salt – ½ tsp
  7. Powdered broth – ½ tsp
  8. Black pepper – ¼ tsp

Preparation Steps

  1. Soak the Edashi Edamame in hot water for 2 minutes, then peel the skins. Set aside.
  2. Peel and grate the cleaned potatoes, then squeeze out any excess moisture.
  3. Boil the potatoes for 10 minutes. Drain.
  4. Mix the potatoes with edamame, butter, and all the seasoning ingredients.
  5. Shape and mold the mixture as desired.
  6. Place in the refrigerator until frozen.
  7. Fry over medium heat until golden and cooked through. Drain.
  8. Mini Rosti Edamame is ready to serve.
