A healthy and practical Middle Eastern snack from Edashi, Edamame Falafel. This dish is made from boiled Edashi Edamame mixed with other ingredients such as cheese, garlic, fresh parsley, breadcrumbs, and various spices, then shaped into round balls ready to be fried. It’s crispy and crunchy, thanks to its high plant-based protein content.
Ingredients
- Edashi Edamame – 1 kg
- Cheese – 100 grams
- Garlic – 2 cloves
- Green onions – 2 stalks
- Fresh parsley – 1/2 cup
- Cumin – 1 tsp
- Coriander – 1 tsp
- Bread crumbs – 5 tbsp
- Baking powder – 1/2 tsp
- Salt – 1 tsp
- Lemon juice – 2 tbsp
- Egg – 1
- Olive oil – 2 tbsp
Preparation Steps
- Soak the Edashi Edamame in hot water for 2 minutes, then peel the skins. Set aside.
- Combine all ingredients and blend using a blender or hand blender until smooth.
- Shape the mixture into round balls.
- Fry over medium heat until evenly cooked. Drain excess oil.
- The Edamame Falafel is ready to serve.
