One of the unique and healthy dishes, Vegan Edamame Patty. Made from peeled Edashi edamame, combined with gluten-free tapioca flour and various vegetables to create a savory patty texture and flavor.

Ingredients

  1. Tempe: 100 grams
  2. Mushrooms: 80 grams
  3. Cauliflower: 100 grams
  4. Onion: 70 grams
  5. Garlic: 45 grams
  6. Grated ginger: 10 grams
  7. Peeled Edamame: 300 grams
  8. Tapioca flour: 100 grams
  9. Oil: 20 ml
  10. Tomato paste: 5 grams

Dry spices

  1. Pepper: 10 grams
  2. Salt: 10 grams
  3. Garlic powder: 1.5 grams
  4. Chia seeds: 20 grams
  5. Mushroom broth powder: 5 grams
  6. Chilli powder: 2.5 grams
  7. Onion powder: 3 grams
  8. Ground coriander: 5 grams
  9. Brown sugar: 10 grams

Preparation Steps

  1. Grind the tempe, mushrooms, and cauliflower with a food processor until coarsely chopped. Then sauté with oil until wilted. (Ingredient A)
  2. Grind the peeled edamame with a food processor until coarsely chopped. Then sauté until dry. (Ingredient B)
  3. Grind the onion, garlic, and ginger with a food processor. Sauté the mixture until cooked, then set aside. (Ingredient C)
  4. Combine all the dry spices in one bowl.
  5. Mix Ingredient A, Ingredient B, Ingredient C, and tomato paste until well combined.
  6. Add the dry spices and mix thoroughly.
  7. Add the oil and mix well.
  8. Add the tapioca flour and mix thoroughly.
  9. Once the mixture is well combined, take 60 grams of the mixture and shape it.
  10. Prepare a steamer and place the shaped patties into the steamer once the water is boiling.
  11. Steam for 15 minutes, then remove and drain.
  12. Once cooled, the patties can be stored in the freezer.

  1. Prepare the thawed Edamame Patties.
  2. Heat oil in a pan, cook the patty over medium heat for a few minutes. Flip to ensure even cooking. Remove and drain.
