One of the unique and healthy dishes, Vegan Edamame Patty. Made from peeled Edashi edamame, combined with gluten-free tapioca flour and various vegetables to create a savory patty texture and flavor.
Ingredients
- Tempe: 100 grams
- Mushrooms: 80 grams
- Cauliflower: 100 grams
- Onion: 70 grams
- Garlic: 45 grams
- Grated ginger: 10 grams
- Peeled Edamame: 300 grams
- Tapioca flour: 100 grams
- Oil: 20 ml
- Tomato paste: 5 grams
Dry spices
- Pepper: 10 grams
- Salt: 10 grams
- Garlic powder: 1.5 grams
- Chia seeds: 20 grams
- Mushroom broth powder: 5 grams
- Chilli powder: 2.5 grams
- Onion powder: 3 grams
- Ground coriander: 5 grams
- Brown sugar: 10 grams
Preparation Steps
- Grind the tempe, mushrooms, and cauliflower with a food processor until coarsely chopped. Then sauté with oil until wilted. (Ingredient A)
- Grind the peeled edamame with a food processor until coarsely chopped. Then sauté until dry. (Ingredient B)
- Grind the onion, garlic, and ginger with a food processor. Sauté the mixture until cooked, then set aside. (Ingredient C)
- Combine all the dry spices in one bowl.
- Mix Ingredient A, Ingredient B, Ingredient C, and tomato paste until well combined.
- Add the dry spices and mix thoroughly.
- Add the oil and mix well.
- Add the tapioca flour and mix thoroughly.
- Once the mixture is well combined, take 60 grams of the mixture and shape it.
- Prepare a steamer and place the shaped patties into the steamer once the water is boiling.
- Steam for 15 minutes, then remove and drain.
- Once cooled, the patties can be stored in the freezer.
Cooking steps for Edamame Patty
- Prepare the thawed Edamame Patties.
- Heat oil in a pan, cook the patty over medium heat for a few minutes. Flip to ensure even cooking. Remove and drain.
