Introducing Edamame Fried Kwetiau, made from a combination of kwetiau noodles and Edashi edamame, complemented by a variety of vegetables of your choice. It offers a fragrant aroma, with soft and delicious noodle textures.
Ingredients
- Kwetiau noodles: 150 grams
- Edashi edamame: 150 grams
- Red chilies: 3 pieces
- Mushrooms: 2 pieces
- Cabbage: 50 grams
- Garlic: 2 cloves
- Bok choy: 2 stalks
- Carrot: ½ piece
- Radish: ½ piece
- Fried shallots: As needed
- Sesame oil: ½ tsp
- Fish sauce: ½ tsp
- Sweet soy sauce: ½ tsp
- Worcestershire sauce: ½ tsp
Preparation Steps
- Soak the edamame in hot water for 2 minutes, then drain and peel. Set aside.
- Boil the Kwetiau noodles in boiling water for 10 seconds, then remove and rinse/soak them in cold water. Drain and set aside.
- Mince the garlic, then slice the carrot, radish, mushroom, and bok choy thinly. Set aside.
- Blend the red chilies with 1 clove of garlic, then sauté until fragrant.
- Add sesame oil, fish sauce, sweet soy sauce, and Worcestershire sauce, stirring well.
- Add the carrot, radish, bok choy, mushrooms, edamame, and cabbage. Stir until evenly mixed.
- Add the cooked Kwetiau noodles and stir until well combined.
- Cook thoroughly and adjust the seasoning to taste.
- Remove from heat and serve with fried shallots and a fried egg on top.
