Introducing Edamame Fried Kwetiau, made from a combination of kwetiau noodles and Edashi edamame, complemented by a variety of vegetables of your choice. It offers a fragrant aroma, with soft and delicious noodle textures.

Ingredients

  1. Kwetiau noodles: 150 grams
  2. Edashi edamame: 150 grams
  3. Red chilies: 3 pieces
  4. Mushrooms: 2 pieces
  5. Cabbage: 50 grams
  6. Garlic: 2 cloves
  7. Bok choy: 2 stalks
  8. Carrot: ½ piece
  9. Radish: ½ piece
  10. Fried shallots: As needed
  11. Sesame oil: ½ tsp
  12. Fish sauce: ½ tsp
  13. Sweet soy sauce: ½ tsp
  14. Worcestershire sauce: ½ tsp

Preparation Steps

  1. Soak the edamame in hot water for 2 minutes, then drain and peel. Set aside.
  2. Boil the Kwetiau noodles in boiling water for 10 seconds, then remove and rinse/soak them in cold water. Drain and set aside.
  3. Mince the garlic, then slice the carrot, radish, mushroom, and bok choy thinly. Set aside.
  4. Blend the red chilies with 1 clove of garlic, then sauté until fragrant.
  5. Add sesame oil, fish sauce, sweet soy sauce, and Worcestershire sauce, stirring well.
  6. Add the carrot, radish, bok choy, mushrooms, edamame, and cabbage. Stir until evenly mixed.
  7. Add the cooked Kwetiau noodles and stir until well combined.
  8. Cook thoroughly and adjust the seasoning to taste.
  9. Remove from heat and serve with fried shallots and a fried egg on top.
