One of the unique and healthy snacks, here is Edamame Tempe. This snack is made from Edashi Edamame and Tempe Yeast. It’s healthy and rich in protein.

Ingredients

  1. Edashi edamame 2 packages
  2. Tempe yeast 0.5 grams / ⅛ tsp

Tools

  1. Soaking tray 1
  2. Plastic bag (½ kg size) / 1 sheet of banana leaf
  3. Bamboo tray/plain cloth 1×1 m² 1
  4. Needle 1

Preparation Steps

  1. Soak Edashi edamame in hot water for 2 minutes.
  2. Peel Edashi edamame, then boil for 15 minutes.
  3. Clean the skin of the boiled Edashi edamame.
  4. Soak the peeled Edashi edamame in clean water (can use tap water) for about 20 hours or overnight.
  5. After soaking, boil the Edashi edamame and the soaking water for 15 minutes, then drain.
  6. Spread the Edashi edamame on a bamboo tray or plain cloth to cool, ensuring the surface of the beans dries.
  7. The beans are sufficiently dry when no residue sticks to your hand after touching them. Once they are dry, you can proceed to the next step.
  8. Transfer the Edashi edamame to a container, then evenly sprinkle the tempe yeast on the beans.
  9. Wrap the Edashi edamame in plastic or banana leaves.
  10. If using plastic, poke holes in the entire surface with a needle, ensuring they are spaced evenly. If using banana leaves, no need to poke holes.
  11. Place the wrapped Edashi edamame in a room with good air circulation and a cool temperature for about 40 hours or 2 days.
  12. The Edashi edamame tempe is now ready to be processed according to your preference.
