Delicious and addictive! Here’s Edashi’s version of Pesto Fried Rice. Made from a combination of savory fried rice and aromatic pesto, topped with crunchy, protein-rich boiled Edamame Edashi.

Ingredients

A. Pesto

  1. Edashi Edamame 100 grams
  2. Parmesan cheese 20 grams
  3. Roasted cashews 150 grams
  4. Basil leaves 20 grams
  5. Garlic 5 cloves
  6. Oil 140 mL
  7. Spinach 50 grams

B. Fried Rice

  1. Edamame Edashi 150 grams
  2. Rice 180 grams
  3. Oil 1 tbsp
  4. Edamame Pesto 50 grams
  5. Smoked beef 2 slices

Preparation Steps

  1. Soak the Edamame Edashi in hot water for 2 minutes, then peel the skins.
  2. Dip the basil leaves in hot water for about 10 seconds.
  3. Prepare a blender, then add all the pesto ingredients and blend until smooth.
  4. The pesto is ready to be added to dishes. Edamame pesto can be used for 4 servings of pasta.
  5. Heat oil in a pan over medium heat.
  6. Sauté the pesto with smoked beef and peeled edamame until fragrant.
  7. Add the rice to the mixture and stir until well combined.
  8. The Edamame Pesto Fried Rice is ready to enjoy!
