Inspired by the Dorayaki bread loved by Doraemon, here comes Edamame Dorayaki—a sweet and fluffy treat. Made from a blend of gluten-free Sago Flour and healthy Edashi Edamame, it also helps prevent anemia. A must-try!
Ingredients Pancake
- Sago Pancake Premix – 1 pouch
- Eggs – 2 pieces
- Water – 150 ml
- Vegetable Oil – 4 tbsp
- Liquid Milk – 2 tbsp
Filling
- Edashi Edamame – 200 grams
- Sago Flour – 10 grams
- Vegetable Oil – 50 ml
- Sugar – 25 grams
- Vanilla Powder – ¼ tsp
Preparation Steps
- Soak Edashi Edamame in hot water for 2 minutes, then peel and roughly chop. Set aside.
- Beat 2 eggs, then add 150 ml of water and 4 tablespoons of vegetable oil. Mix until well combined.
- Gradually mix the sago pancake premix with the beaten eggs while stirring until there are no lumps.
- Cook the batter using a non-stick pan over low heat. Flip the pancake when the bottom side is cooked and cook until evenly done.
- Prepare the filling by mashing the peeled edamame with water until it has a slightly coarse texture.
- Add sugar, oil, vanilla, and sago, then cook until the mixture thickens. Set aside.
- Spread the filling between two cooked pancakes, then press the edges together.
- Edamame Dorayaki is ready to serve.
