Edamame Cake, this irresistible treat is much healthier than regular cakes. A delightful blend of sago flour and Edashi Edamame creates a softer, crispier texture while also being gluten-free.

Ingredients

  1. Edashi Edamame – 100 grams
  2. Sago flour – 100 grams
  3. Rice flour – 80 grams
  4. Palm sugar – 125 grams
  5. Melted butter – 10 grams
  6. Eggs – 3
  7. Baking powder – 1/2 tsp
  8. Vanilla essence – 1/2 tsp

Preparation Steps

  1. Soak Edashi edamame in hot water for 2 minutes, then peel off the skin.
  2. Blend the peeled edamame until smooth using a blender. Set aside.
  3. Whisk the eggs, palm sugar, and vanilla essence until fluffy using a mixer.
  4. In a separate bowl, mix sago flour, rice flour, baking powder, and cinnamon, then stir until evenly combined.
  5. Gradually combine the dry ingredients with the wet mixture using a spatula.
  6. Slowly add the blended edamame into the batter while mixing until well incorporated.
  7. Add the melted butter to the batter and stir until evenly mixed.
  8. Pour the batter into cake molds, filling them almost to the top.
  9. Bake in the oven at 180°C (356°F) for 15 minutes.
  10. Your edamame cake is ready to serve.
