A Middle Eastern-style snack made from a blend of protein-rich Edashi Edamame and Tahini paste. Perfect as a dip for crackers, biscuits, baguette, or chips.

Ingredients

Tahini Ingredients

  1. Sesame seeds – 140 grams
  2. Vegetable oil – 4 tbsp
  3. Salt to taste

Edamame Hummus Ingredients

  1. Peeled Edashi Edamame – 250 grams
  2. Lemon – 1
  3. Tahini – 60 ml
  4. Garlic – 1 clove
  5. Ground cumin – 1/2 tsp
  6. Salt – 1 tsp
  7. Water – 3 tbsp
  8. Chili powder – 1 tsp

Preparation Steps

  1. Soak Edashi Edamame in hot water for 2 minutes. Peel the Edashi Edamame and set aside.
  2. Toast the sesame seeds in a wide pan over low-medium heat until they turn a dark brown. Remove and let cool to room temperature.
  3. Grind the toasted sesame seeds in a food processor.
  4. Add oil and salt until it forms a creamy texture.
  5. The tahini is ready to use.
  6. Combine tahini and lemon juice in a food processor for 1 minute until smooth and creamy.
  7. Finely chop the garlic, then add it to the food processor along with olive oil or vegetable oil, ground cumin or cumin powder, and salt. Blend for 30 seconds.
  8. Remove the skins from the peeled Edamame or mukimame, then add them to the food processor and blend until thick and smooth.
  9. Add water if the hummus is too thick.
