About the Food
One of everyone’s favorite snacks, Putu Ayu Edamame. This snack is different from the usual Putu Ayu as it is made with a combination of sago flour and Edamame Edashi. The texture and flavor are sweet, savory, and soft, with a filling of palm sugar that will surely lift your mood.
Ingredients
- Sago flour 150 gram
- Rice flour 100 gram
- Edamame Edashi 320 gram
- Granulated sugar 120 gram
- Grated coconut 160 gram
- Instant thick coconut milk 100 ml
- Water 100 ml
- Margarine 40 gram
- Eggs 2
- SP (emulsifier) 1 tsp
- Vanilla (to taste) / ¼ tsp
- Salt ½ tsp
- Pandan leaf 1 piece
Preparation Steps
- Soak Edamame Edashi in hot water for 2 minutes, then drain.
- Peel the Edamame Edashi and remove the skins, then blend until smooth.
- Mix rice flour, sago flour, and edamame, then set aside (A).
- Mix coconut milk, margarine, and vanilla, then set aside (B).
- Mix grated coconut, salt, and pandan leaf, stir well, and steam for 10 minutes. Remove and set aside (C).
- Beat the eggs, sugar, and SP quickly until the mixture becomes light and fluffy.
- Gradually add the flour mixture (A) and the coconut milk mixture (B) into the egg mixture, alternating, stirring gently until well combined.
- Prepare the molds, place the steamed grated coconut in the bottom, and press it down.
- Slowly pour the batter over the coconut, then tap gently to compact.
- Steam for 30 minutes until cooked.
- Remove, cool, and remove from the mold.
- Edamame Putu Ayu is ready to serve.
