Edamame Pancake is a unique twist on the traditional pancake, combining the health benefits of Edashi Edamame, rich in protein and vitamins. This dish offers a delightful blend of soft, sweet, and savory flavors that tantalize the taste buds.
Ingredients
- Edashi Edamame 400 grams
- Medium-protein flour 150 grams
- Rice flour 50 grams
- Granulated sugar 2 tablespoons
- Yeast ½ teaspoon
- Baking powder 1 teaspoon
- Salt ½ teaspoon
- Egg 1 piece
- Coconut milk 65 ml
- Water 250 ml
Preparation Steps
- Soak Edashi Edamame in hot water for 2 minutes, then peel off the skin.
- Blend the peeled Edashi Edamame until smooth. Mix all the dry ingredients and stir until well combined. Set aside.
- Combine the dry ingredients and stir well.
- Add the wet ingredients and the blended edamame, then mix using a whisk.
- Cover the mixture and let it rest for 30 minutes.
- Heat a non-stick pan and cook over medium heat until small holes form on the surface.
- Edamame Pancakes can be served with palm sugar syrup.
