Edamame Pancake is a unique twist on the traditional pancake, combining the health benefits of Edashi Edamame, rich in protein and vitamins. This dish offers a delightful blend of soft, sweet, and savory flavors that tantalize the taste buds.

Ingredients

  1. Edashi Edamame 400 grams
  2. Medium-protein flour 150 grams
  3. Rice flour 50 grams
  4. Granulated sugar 2 tablespoons
  5. Yeast ½ teaspoon
  6. Baking powder 1 teaspoon
  7. Salt ½ teaspoon
  8. Egg 1 piece
  9. Coconut milk 65 ml
  10. Water 250 ml

Preparation Steps

  1. Soak Edashi Edamame in hot water for 2 minutes, then peel off the skin.
  2. Blend the peeled Edashi Edamame until smooth. Mix all the dry ingredients and stir until well combined. Set aside.
  3. Combine the dry ingredients and stir well.
  4. Add the wet ingredients and the blended edamame, then mix using a whisk.
  5. Cover the mixture and let it rest for 30 minutes.
  6. Heat a non-stick pan and cook over medium heat until small holes form on the surface.
  7. Edamame Pancakes can be served with palm sugar syrup.
