For vegan food lovers, try this delicious and flavorful Indonesian dish, Vegan Curry. This dish is made with jackfruit and okra, combined with Edashi Edamame, which adds a delightful and savory texture.
Ingredients
- Edashi Edamame 500 grams
- Young jackfruit ½ kg
- Okra 100 grams
- Powdered coconut milk 1 ½ liters
- Water 500 ml
- Candlenuts 3 pieces
- Shallots 50 grams
- Red chilies 15 pieces
- Kaffir lime leaves 6 leaves
- Bay leaves 6 leaves
- Lemongrass 2 stalks
- Turmeric 3 cm
- Galangal 3 cm
- Ginger 2 cm
- Coriander 1 tbsp
- Salt 1 tsp
- Sugar 1 tsp
- Mushroom stock 1 tsp
- Vegetable oil 5 tbsp
Preparation Steps
- Soak the Edamame in hot water for 2 minutes, then peel off the skin. Set aside.
- Boil the jackfruit with salt and a little vegetable oil until tender. Then soak in cold water.
- Remove the jackfruit seeds and discard the tough parts. Set aside.
- Blend the candlenuts, shallots, red chilies, turmeric, galangal, ginger, and coriander with a little oil until smooth.
- Sauté the blended spices until fragrant.
- Add lemongrass, kaffir lime leaves, and bay leaves, then sauté again until wilted.
- Add the softened jackfruit along with the powdered coconut milk and water, then stir until well mixed.
- Add the Edamame and okra, then stir until well combined.
- Cook until fully done and the spices are absorbed.
- Vegan curry is ready to be served.
