For vegan food lovers, try this delicious and flavorful Indonesian dish, Vegan Curry. This dish is made with jackfruit and okra, combined with Edashi Edamame, which adds a delightful and savory texture.

Ingredients

  1. Edashi Edamame 500 grams
  2. Young jackfruit ½ kg
  3. Okra 100 grams
  4. Powdered coconut milk 1 ½ liters
  5. Water 500 ml
  6. Candlenuts 3 pieces
  7. Shallots 50 grams
  8. Red chilies 15 pieces
  9. Kaffir lime leaves 6 leaves
  10. Bay leaves 6 leaves
  11. Lemongrass 2 stalks
  12. Turmeric 3 cm
  13. Galangal 3 cm
  14. Ginger 2 cm
  15. Coriander 1 tbsp
  16. Salt 1 tsp
  17. Sugar 1 tsp
  18. Mushroom stock 1 tsp
  19. Vegetable oil 5 tbsp

Preparation Steps

  1. Soak the Edamame in hot water for 2 minutes, then peel off the skin. Set aside.
  2. Boil the jackfruit with salt and a little vegetable oil until tender. Then soak in cold water.
  3. Remove the jackfruit seeds and discard the tough parts. Set aside.
  4. Blend the candlenuts, shallots, red chilies, turmeric, galangal, ginger, and coriander with a little oil until smooth.
  5. Sauté the blended spices until fragrant.
  6. Add lemongrass, kaffir lime leaves, and bay leaves, then sauté again until wilted.
  7. Add the softened jackfruit along with the powdered coconut milk and water, then stir until well mixed.
  8. Add the Edamame and okra, then stir until well combined.
  9. Cook until fully done and the spices are absorbed.
  10. Vegan curry is ready to be served.
